This is my second pan, why? It gets scratched every time you take the cake out of the pan, and eventually you have to replace it. If you're lucky, most of time, most of it comes out in one piece, but it's a struggle no matter what spatula I use. Most recipes for this mold say "do not grease the pan." I understand why, because you have to cool it upside down so it looks beautiful when you turn it over. But really, what is the magic in getting it out?
